Koji & Co is committed to maintain the Japanese traditions

Our traditional Japanese Koji and Miso production has been certified by the local council in the state of Victoria in Australia based on our own HACCP Food Safety Program since 2019. 

It had took nearly 2 years for Saeko to complete the Food Safety Program based on HACCP so that she could start selling fresh and unpasteurised Miso legitimately in Victoria, Australia.
Under the current Food Act of Australia, it is required to pasteurise Miso to make them commercially available. 

This Food Safety Program includes the usage of traditional wooden Koji trays and Miso Oke from Japan - we are the one and only Miso and Koji manufacturer registered in Victoria to handmade fresh and unpasteurised products officially using these traditional equipments.
